bread pudding recipe

For me, bread pudding is the epitome of comfort food. This classic treat is chocked full of texture and flavour. Serve with your choice of either a vanilla or rum sauce, custard or ice cream and serve it with a cuppa-guaranteed to become the new favourite.

Bread pudding


INGREDIENTS

  • 10-12 slices of day old or stale bread, cubed

  • 1/2 cup of raisins (optional)

  • 2 cups of milk

  • 4 large eggs

  • 3/4 cup packed brown sugar

  • 1/4 cup of butter, melted

  • 2 tsps. vanilla extract

  • 1 tsp. cinnamon

  • 1/2 tsp. nutmeg

  • Walnut pieces to top

METHOD

Preheat oven to 350º F. Grease an 8-inch square baking dish.

Combine cubed bread and optional raisins in a large bowl and place in an even layer into your prepared baking dish. Set aside.

Whisk the milk, eggs, sugar, melted butter, vanilla extract, cinnamon and nutmeg together in a medium bowl. Pour this mixture over the bread; make sure the mixture fully coats the bread. Top with brown sugar and walnut pieces. Let stand for approximately 10 minutes so the bread can absorb some of the liquid.

Bake for 35 to 45 minutes or until knife inserted in centre comes out clean.
