There's nothing like slicing into a rich and flavourful plain cake, especially right out of the oven. Stick around, you’ll want to give this recipe a try.

This traditional treat is enjoyed throughout the island of Barbados and is known for its dense, moist texture and delectable flavour. I think it’s the perfect dessert to sit back and enjoy with a cup of tea, or take it to a get together to enjoy with family and friends. Nevertheless, let’s skip the banter, grab your ingredients and let's get started!

INGREDIENTS:

  • 1 1/2 cups all-purpose flour

  • 2 tsps baking powder

  • 1/2 cup unsalted butter, softened

  • 1 cup sugar

  • 2 large eggs

  • 1 tsp vanilla essence

  • 1/2 cup milk

INSTRUCTIONS:

  1. Preheat your oven to 350°F. Grease and lightly flour a baking pan.

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition.

  4. Stir in the vanilla extract.

  5. In another bowl combine the flour and baking powder. Gradually add these dry ingredients to the wet ingredients, alternating with the milk, until everything is well combined.

  6. Pour the batter into your baking pan.

  7. Bake for approximately 35 minutes, or until a toothpick inserted into the centre of the cake comes out clean.

  8. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
